Buttermilk blueberry pancake

For the last month i already made this recipe 4 times as a treat  during my days off and at home we got addicted to these buttermilk pancakes . The recipe is the same as most pancakes , the difference is using buttermilk instead of ordinary milk for richer and fluffier pancake.

Makes 4 pancakes:

*1 cup of plain flour

*2 tbsp of sugar

*1/2 tsp of baking powder

*1/2 tsp of baking soda

*1/2 tsp of salt

*1 cup of buttermilk

*1 egg

*1 cup of fresh or frozen blurberries

*oil for the pan

 

1.Place all the dry ingredients in a mixing bowl .

2.Gradually add the buttermilk while whisking to prevent any lumps

3.Add the egg and mix.

4.In a nonstick frying pan , pour a little bit of oil , and pour a quarter of the pancake mix in the pan, add some blueberries and cook  the pancake on medium  heat for a minute before flipping. Repeat the process for the remaining batter.

5.Serve the pancake with a slab of butter and a drizzle of maple syrup.
