this drecipe is a roast vegetable soup , it is a nice healthy dish with lots of Mediterranean flavour such as garlic , harissa , olives….. You can prepare this dish in advance for the following day or do it on the day because it is fast to cook around one hour all together, believe me it’s worth it .let’s get cooking .
5 garlic cloves
1/2 cup sliced olives
1 cup cooked pinto beans ( or any other beans such as butter beans , broad beans , chickpeas….)
1 liter of vegetable stock
1 tablespoon of tomato paste
1 teaspoon of harissa ( optional)
Start by dicing the courgettes and peppers and put into a roasting tray , add the olive and the 5 crushed garlic cloves, add salt pepper and olive oil and roast for 20 min at 180 degrees celcius or 350 Fahrenheit.
Blend half of the soup and mix with the rest, reheat and serve.
