Last time after work i didn’t know what to eat and believe it is harder as a chef , when you served 120 people in one service , the last thing you want to do when you go home is cook. so i decide to have an easy but tasty treat squid and chips . I served it in a newspaper to give it this authentic ” fish and chips ” look that you can create for parties , its a cheap way to impress your guest with this bistro look. I served it with a lime and chilli mayonnaise to give a modern taste . You can serve this as a starter, main course or even as an appetizer , I give 2-3 squid par guest.
I cannot really give you proportions as it is up to you to decide how you are going to serve it , like i said earlier , as a starter or main course.But i will give you the proportion of the mayonnaise , this time i got a bit lazy so i used industrial mayonnaise but you can make your own , it will be even better. For 1 cup of mayonnaise i use the zest and juice of half a lime and a half chopped chilli.
Preheat the oil at 180 degrees Celsius, slice the squid in 1/2 cm ring then add salt and cracked pepper and coat in cornflour , shake well to remove the extra cornflour and and deep fry for 1-2 min . Serve with home-made chips and enjoy.
