spicy haddock with yellow pepper coulis and an olive couscous

This is one of my favorites combination , white fish and harissa paste . For people who dont know what is harissa , it is a Tunisian chilli paste made from crushed sun dried chillies and a few spices , it is often found in asian shop and sometimes if you are lucky can be found  in supermarkets . It is usually used with the couscous , a north African vegetable and meat stew which recipe can vary from different areas of Africa.  Personally i love to use harissa with chicken or white fish as a marinade as it will change the colour of the flesh to orange.  So next time you go shopping look for some harissa and discover this awesome flavour.

Ingredients :

serves two

*2 haddock fillets

*3 yellow pepper

*2 garlic cloves

*1 schallot

*1 cup couscous

*1 cup boiling water

*2 tablespoon harissa

*4 tablespoon olive oil

*1/2 cup chopped olives

1.In a bowl or a box marinate the fish with the harissa , olive oil and 1 chopped garlic clove for an hour.

2. In a pot  fry the chopped yellow peppers with one garlic clove chopped  and shallots in olive oil and then add 2 pint of water and let it reduce.

3. Once the peppers are cooked and the juice have reduced , blend and pass through a sieve to get a smooth coulis and then season with salt and pepper.

4. In a bowl add couscous with the olives , salt ,pepper and pour the boiling water and cover with cling film or a plate for 4-6 min.

5. In the meantime pan fry the haddock skin down for 2  min and then finish on the other side .

6.With a fork mix the couscous to separate the grains and you can also add a bit of olive oil   , and serve . You can serve straight away.
