Citrus lemonade

For the first time this year we had a great weather in Ireland . Everybody rushed to the beach to get tan  while having an ice cream . As a chef i am stuck in a kitchen all day in front of the stove and the first thing i want when i go home is a fresh drink , so in my day off i made 3 litres of home-made lemonade  to refresh me after work . here is the recipe.

Ingredients :

Makes 3 litres

* zest and juice of 1 orange , 1 grapefruit and 3 limes

*2 cup sugar

*1 cup lemon juice

*500 ml water

* 2 litres sparkling water

1. In a pot dissolve the sugar in the water and boil until you get a syrup then add the zest and  juice of the lime , orange and grapefruit.

2. Add the lemon juice and sparkling water and keep in the fridge overnight.

3.Pass the lemonade trough a sieve and pour in bottles , you can keep it in the fridge for a few days .

Back in the day when I used to work in the hot stuffy kitchen myself, my sister used to make a wonderful ice tea and it was so simple. she would get a few bags (to you like)of black tea in about a cup of water and let them really bleed out. Then she would get some sugar syrup in a jar, pour the tea and 2.5 liters of water, she will add the juice of half a lime and half and orange and then she will add mint leaves and slices of oranges and put it in the freezer for 10 min then move it to the fridge.
    It is the best refreshing and cooling drink ever. may be you should try it and let me know what you think.
