I am in a part of my life where i realised being on a little diet won’t do me any harm. So since the last few weeks , i separated from cheese and chocolate ( believe me it is hard to be french and not eat cheese) and i welcomed fresh fruits and vegetables for a healthier lifestyle . I do not know if i really lost weight as i hate my scale but i feel 200 times better . In this post i used bulgar wheat , some people think seeds are boring and tasteless but it is our job to make them exciting and the addition of sundried tomatoes give it a lovely flavour . And instead of using a creamy sauce or flavoured butter , i made an aubergine caviar to accompany the grilled fish it is a great alternative .
serves 4 people
*4 fillet of cod
*10 sundried tomatoes
*250 grs bulgar wheat
*1 litre cold water
1. on a chopping board cut the aubergines in half, incise the flesh with a knife and season , then bake in a preheated oven at 170 degrees celsius for 40 min.
2.In a bowl add the chopped sundried tomatoes with the bulgar wheat and the water and leave it to rest for at least 30 min.
3.Once the aubergines are cooked ,collect the flesh with a spoon , season if needed and blend it in food processor .
4. Drain the bulgar wheat , season and add a drizzle of olive oil .
5. At the last moment before serving grill the cod with some olive oil and serve .
