Stuffed tortellini with zucchini and chorizo

As a chef  , i have a busy roster  with long shifts and sometimes i don’t have the time to cook or i feel a bit lazy . This is why i always keep  in my freezer , bags of ravioli, tortellini or gnocchi   and last time when i went shopping i found this great Gorgonzola and walnut  tortellini so i bought three bags of it . So friday before going to work i opened my fridge and wondered which dish can i eat including zucchini and chorizo , and then i remembered  i had a bag of tortellini left , so this is how i got this idea and believe me , it was sexy , the creaminess of the gorgonzola aith crunchy zucchini and spicy chorizo really does the trick . Off course you can try this dish with other kind of pasta like  gnocchi , penne , tagliatelle …….  If next time you want a quick tasty dish in minutes , try this recipe you won’t be disapointed .

Ingredients :

Serves two:

*250 grs stuffed tortellini

*2 zucchini (or courgettes)

*2 garlic cloves

*a handful of chopped chorizo

1. In a frying pan add the chorizo first  so it will release its fat and then add the garlic .

2.Cut the courgette in half and then in baton shape , and add to the garlic and chorizo , keep stirring

3. In the meantime  cook the tortellini in a pot of salty boiling water  for around a minute .

4. Drain the pasta and add to the pan , season with cracked black pepper and serve. enjoy
