Blueberry muffins

This week my head chef decided to give me and my co workers an extra day off  so i decided t o bake myself a little treat . So i went shopping for groceries and i found fresh blueberries on sale at 1.50 euros for 200 grs which is very cheap for Ireland . I came back home and started baking this muffins which are lovely especially warm with a nice coffee.

Ingredients:

Makes 8 muffins:

*1 and 1/2 cup of plain flour

*3/4 cup of sugar

*1/2tbsp honey

*1/2 tsp salt

*2 tsp baking powder

*1/3 cup vegetable oil

*1 egg

*1/3 cup milk

*1 cup fresh blueberries

*1/2 tsp vanilla essence

1.Preheat the oven at 200 degrees Celsius.

2.In a mixing bowl , combine all the dry ingredients .

3.In another bowl beat the egg with the milk, oil and vanilla essence, then fold in the dry mix.

4.Lightly coat the blueberries in flour and add to the muffin mix .

5.Pour the mix into a muffin tin lined with muffin cases and bake 25 min at 200 degrees Celsius.
