Spaghetti with a spicy sausage and garlic tomato sauce

Today is my last day off  before i go back to work tomorrow  and i cannot wait , since i cannot do what i want due to my injured hand . Even for cooking i am limited so this is why today’s post  is an easy recipe but  it was really good , my fiancee really enjoyed it . This is the kind of dish that i cook when i have nothing in the fridge and the weather is bad , for the last few days in ireland we had continuous strong wind  so i stayed home and looked in my freezer as i always keep some meat there . For the tomato sauce i used Cumberland sausages which have a 75% meat content  and a jar of spicy dolmio sauce  . It is kind of like a bolognese but with sausage instead of mince beef . Actually in the following weeks i must cook and post the recipe of my grandma wich is pastachoute , i don’t know the origins of this dish , all i can say is that it is sexy. basically it is a bolognese but with corned beef instead of mince beef , not really a healthy dish but it is full of childhood memories for me , i will post it soon on my page.

Spaghetti with a spicy sausage and chilli tomato sauce

Ingredients :

serves 4:

*8 good quality sausages

*1 onion

*3 garlic cloves

*2 jars of dolmio tomato sauce  ( i used the spicy one but you can use any tomato sauce )

*300 grs of spaghetti

*1/2 tsp chilli flakes

*3/4 cup grated mozarella.

1. Thinly slice the raw sausages and sear in a frying pan for around 2 minutes before adding the diced onion and chopped garlic.

2.Once the ingredients are nice and golden add the tomato sauce and a pint of water . Season with salt, pepper , chilli flakes and a small pinch of sugar as the tomato could be a bit acid.

3.Reduce on low heat until the sauce has thickened.

4.In a pot of boiling salty water  cook the spaghetti , it should take around 8 min depending  of the way you like your pasta ( fully cooked or al dente ) and drain.

5.Serve the pasta in plates or pasta bowls ,pour the sauce on top and sprinkle with cheese , you could serve this dish with some garlic bread and a green salad .

Bon appetit.

  1. Its like you read my mind! You appear to know a lot about this, like you wrote the book in it or
something. I think that you could do with a few pics to drive the message
home a bit, but other than that, this is fantastic blog.
A fantastic read. I will certainly be back.

  2. I was wondering if you ever considered changing the layout of your website?
Its very well written; I love what youve got to
say. But maybe you could a little more in the way of content so people could connect with it better.

Youve got an awful lot of text for only having one or two images.
Maybe you could space it out better?
