Recently i read in a book that baking bread is a great stress reliever and i think it work. In the last few weeks i tried to bake more , at least twice a week and mostly bread and sometimes pastry. In my little town in ireland the choice of bread isn’t great , it is mainly wheaten bread and sliced loaf and as a french man i sometimes miss my childhood ” pain de campagne “or “baguette “. One of my favorites restaurants in donegal called ” LA FANTASIA” serves as a side order fresh focaccia which is a great accompaniment to saucy dish. This is a plain version of the recipe but you can add mostly anything you want to the dough from black olives to roasted peppers or even Gorgonzola cheese , just follow your taste buds
*250 grs bread flour
*10 grs salt
*50 ml olive oil
*10 grs of fast action dry yeast
*150 ml of lukewarm water
*1 tbsp of herbes de Provence but you can add any other dry herbs (oregano, marjoram ….)
1.Preheat the oven at 203 degrees Celsius.
2.In a bowl put the flour, salt , yeast, water and only half of the olive oil keeping the other half for later.
3. Mix together until a dough is formed and then tip out on a floured surface then knead for 5-6 min. Leave to rest for an hour.
4.Once risen put the dough on a lined baking tray , flatten with your hands until the dough is about an inch thick.
5. Drizzle the remaining olive oil on the dough , sprinkle the herbs and with your fingers make some little holes in the bread .
6.Rest for another hour and bake for about 25 min.
