Chicken supreme with jardiniere de legumes.

Jardiniere de legumes is a french dish that we usually eat during winter in france. It is basically a mix of seasonal vegetables braised in stock that you can serve with some meat or even preserve in jars for the following months , it is a great way to eat seasonal vegetables all year round. The choice of vegetables can vary from green beans to turnip to butter beans and many more . I cooked it today because me and my fiancee have the flu for the last week and i wanted hot and filling and it another occasion for my fiancee to discover a dish from my country as she is Irish and there is a big culinary gap between our two country . From the ingredients list you can either remove or add any vegetable of your liking .

Ingredients:
Serves 4 :
* 4 chicken supremes
*20 baby potatoes
*5 carrots
* 2 leeks
* 5 shallots
* 3 garlic cloves
* 2 onions
* 1 and 1/2 cup of frozen peas
* 1 litre of chicken stock
* 1 bouquet garni
* 2 tbsp olive oil

1. In a large pot sear the chicken in the olive oil until golden brown , remove from the pot and reserve on the side.
2. Add to the same pot with the remaining fat the diced onions and shallots. With a garlic crusher , crush the garlic cloves in the pot.
3. Peel and slice the carrots, slice and clean the leeks and then add both to the other vegetables and pour the chicken stock.
4. Add the chicken to the pot and cook on low heat for around 30 to 40 minutes and then serve.
