Summer is coming ( I hope) . I cannot wait for the BBQ , salads , homemade ice creams and ice cold beer unfortunately the weather isn’t good but the spirit is definitely here. When I used to work in south of France , one of the most famous starter in the summer was ” tomato and mozzarella salad”. It is a great seller in many restaurant on the French Riviera and it is one of the simplest dish ever. It can be dressed on a plate as an individual starter or on a dish for buffet and parties. To me basil is the accompaniment to this starter but you can use any other flavours such as olives, balsamic or roasted garlic . It is not a fancy dish but it sure is a nice and tasty one.
*8 ripe tomatoes
*2 buffalo mozzarella
*2 tbsp of basil pesto
* 2 tbsp of olive oil
1. In a bowl , mix the pesto with the olive oil and season with salt and pepper.
2. Slice and arrange on the plates or dish, the sliced tomatoes and mozzarella .
3. Drizzle with the dressing and serve with some rocket leaves and fresh bread.
