Whipped ganache cupcake

Today i baked my first cupcakes and i was happy of the result . I didn’t want to bake them with strong flavors just a plain vanilla cake and a chocolate ganache frosting. As you can see i called the post whipped ganache cupcake because instead of using butter icing ( that i find too sweet ), i used an easier and for me better option that is to make a chocolate ganache  which consist of cream and chocolate , chill it and then lightly whip it. By using dark chocolate in the ganache , it will compliment the sweetness of the vanilla cake and the result will be more tasty and a lot less sweet .

Ingredients :

Makes 12 cupcakes

For the batter:

*110 grs of softened butter

*110 grs of caster sugar

*110 grs of self raising flour

*2 large eggs beaten

*1 tsp of vanilla essence

For the icing:

*3/4 cup of cream

*150 grs of dark chocolate

*20 grs of butter

1.Preheat the oven at 180 degrees Celsius.

2. In a sauce pan bring the cream to boil , turn off the heat , add the chocolate broken in pieces along with the butter.Whisk well until smooth, transfer to a box and chill in the fridge.

3.With an electric hand mixer , cream the softened butter with the sugar until fluffy and pale. Gradually add the eggs and vanilla essence while mixing.With a spoon fold in the flour and pour into a muffin tray lined with 12 muffin cases.

4.Bake 15 min at 180 degrees Celsius and place on a cooling rack.

5.With the electric mixer whisk the ganache for  about 45 second. It should become lighter and paler , do not overwhipm as i will ruin the ganache and you will to start over again.

6.Once the cupcake are chilled decorate with the whipped ganache , eat one or two and share the remaining 10.
