Surprisingly the sun didn’t left us yet and now the heat is becoming as hot as south of France. Yet in many Irish restaurants soup is still a great seller , and i am not talking about gazpacho or chilled soup , i am talking about nice warm vegetable soup . Being raised in France salads and barbecue is the food that highlight our summer. I seen online the idea of mixing fennel and orange together, although at first it seemed wrong i decided to give it a try and i was shocked ( in a good way). I knew that fennel had a fresh summery taste but combined with orange it is delightful and i will make this salad again , maybe with the addition of pomegranate next time.Hope you enjoy it.
*2 fennel bulbs
*1 red onion
*1 and 1/2 tbsp of olive oil
*1 tbsp of sherry vinegar
*salt and pepper
1 . Peel the onion and the orange , then slice along with the fennel .
2.In a mixing bowl , add the olive oil , vinegar , salt and pepper , mix well and add the sliced vegetable and fruit.
3.With your hands or two spoons mix the lot and serve on its own or as an accompaniment to grilled fish or chicken.
