Easy vanilla creme brulee

As a gift my fiancee got me a creme brulee kit containing a blow torch and ramequins, and i couldn’t wait to use it and since i lost my recipe i used in college , i looked online and found a no bake recipe which was quite strange to me as i always baked mine in a hot water bath called the ” BAIN MARIE” technique . This version worked so well and only took minutes to realise the dish and the taste were amazing .Off course when i finished the creme brulee i finally found my old recipes that i learned in one of my restaurant during college , it is an orange creme brulee recipe that i will share with you soon but this time i will post the no bake vanilla version.

vanilla creme bruleeIngredients:

Makes 8 small creme brulee:

*3 cups of heavy cream

*1 vanilla bean

*8 egg yolks

*1/2 cup of sugar

* 1/3 cup of brown sugar

1.Pour the cream in a pot , slowly heat and add the vanilla bean split lengthwise without forgetting to scrape the seeds .

2.In a mixing bowl cream the egg yolks with the sugar until pale and fluffy.

3.Once the cream start to boil , pour half in the egg mixture , stir well and pour back in the pan .

4.Slowly cook on low heat while constantly stirring with a wooden spoon until thick .( it should take 5 minutes)

5. Remove the vanilla bean and pour the cream into the ramequins and chill in the fridge .

6.Once the creme brulee are cold , sprinkle with brown sugar and burn with a blow torch or under your oven’s grill.

  1. Isn’t creme brulee just amazing?! Awesome recipe! For an extra kick, try using vanilla sugar to torch…it really puts this dessert over the top! 🙂
