Everywhere i look i see cupcakes or muffins , even last time when i went shopping with my fiancee they had “I LOVE CUPCAKES” pyjamas. But being a chef on a diet with a passion for cooking is really hard right now. I am stuck between the need to eat healthy and lay off the sweets but i really want to try and experiment new recipes and upgrade my skills . So i decided that i will eat healthy but once a week i will cook a nice meal or bake a little treat, this time i made cupcakes. I cheated with the frosting which i didn’t make from scratch but i modified it as i found it way to sweet. I hope you gonna enjoy the cupcakes as much as we did.
Makes 12 cupcakes:
*3/4 cup of flour
*1/4 cup of cocoa
*1/4 cup of caster sugar
*2 tsp of baking powder
*1/2 tsp of vanilla essence
*80 grs of melted butter
*1/2 cup of milk
1.Preheat he oven at 160 degrees Celsius.
2. Sift all the dry ingredients in a mixing bowl.
3.With a hand mixer or with a whisk , beat the eggs and add to the dry mix, mix and gradually add the milk while still miving and finally add the melted butter and once the batter is smooth , pour in a muffin tray lined with cupcakes cases.
4.Bake 18 min at 160 degrees Celsius.
5.For the frosting i used Betty crocker vanilla frosting , but i find it very sweet so i mixed a cup of frosting with a cup of cream cheese and pipped it on the cupcake . But you can use your own frosting recipe or the whipped ganache i posted a few weeks ago for an ultimate chocolate cupcake.
