Wasabi salmon with avocado rice

The first time i tasted wasabi  was last year  in london  and i instantly fell in love with it . Being french i grew up  with mustard  as a dipping sauce for grilled meats or as a base for dish like ” rabbit stew in mustard sauce”  , i when i tried it in a sushi place i couldnt get the idea of my head to cook a grilled salmon marinated in wasabi  and once i tasted it i was really surprised that the heat of the wasabi  became sweet once cooked, a delish .  I served the dish with an avocado rice and a little bit of sauce made from just avocado and wasabi , easy but really tasty and fresh.

Serves two:

*2 salmon fillets ( around 150 grs each)

*2 tbsp of wasabi paste

*2 avocado

*1 cup of basmati rice

*2 cup of vegetable stock

*2 tbsp of sesame oil

1.In a pot add the rice with the vegetable stock, bring to boil  then reduce the heat to low, cover with a lid and slowly cook for about 10-15 min depending of the quality of the rice.

2.Switch on the grill function of your oven .Meanwhile mix the wasabi with the sesame oil to obtain a paste that you rub on the salmon .

3.Place the salmon on a baking tray line with greaseproof paper  and cook under the grill for about 8 minutes depending on the thickness of the fish fillets.

4. Cut the avocados in half , remove the seed and spoon out the flesh . Dice 3 half that you will add to the rice.

5.To make the sauce , just blend the  half avocado that we kept earlier with 1 tsp of wasabi and a little bit of water, season with salt and pepper.

6. Once the rice is cooked stir it with a fork then  add the diced avocado and season if needed

7.Once the salmon is cooked serve with  a generous portion of rice and a little dip of the sauce.
