Recently i went o france for a short trip and as usual i checked the fridge to empty it from perishable products but totally forgot the tomatoes. I came back home after a few days and found a box of really riped tomatoes that i didnt want to trow away as i hate waste . So i got a few groceries and cooked an amazing tomato sauce that i preserved into 6 jars for the winter .
Makes 6 jars:
*600 grs of riped tomatoes
*1 large onions
*3 garlic cloves
*2 celery sticks
*2 bell peppers
*1 carrot
*2tbsp of balsamic vinegar
*1 tbsp of sugar
*1 tsp of cayenne pepper
*1 tbsp of fresh thyme
*1 tbsp of olive oil
* 1 vegetable stock cube
1. Peel the garlic and onion and dice along with the peppers,celery and carrots then shallow fry in a large saucepan with the olive oil .
2. Dice the tomatoes and add to the vegetables , stir well.
3. Add the remaining ingredients with 1 pint of water.
4. Slowly cook until the sauce has thicken and then with a hand blender mix for a few seconds if you want to keep some texture into the sauce or blend longer if you want a smooth sauce.Season with salt and pepper.
5.Remove from the heat and pour into sterilized jars and place in a hot water bath for 10 minutes.

Are those official canning jars? They look like reused jars from other things. I thought reusing jar lids this way was quite dangerous for canning?
