Lemon meringue cupcake

I have been a lemon and meringue pie addict since a friend and i worked in a hotel in nice for a college placement. There was this bakery in the ” CAP3000″ shopping center that sold this amazing dessert and since then each time a restaurant has it on the menu , i have to order it . For a few months i wanted to try to transfer the meringue and lemon combination to a cupcake version . I was really glad with the result as it was exactly what i expected but unfortunately¬† so good that i ate three.

lemon meringue cupcakeIngredients:

Makes 10 cupcakes:

*200 grs of sugar

*100 grs of softened butter

*2 eggs

*100 grs of self raising flour

*1 lemon juice + zest

*2 egg whites

*10 tsp of lemon curd

 

1.Preheat the oven at 180 degrees Celsius.

2.In a mixing bowl cream the butter with half of the sugar . Add the lemon zest and juice then the eggs one by one.Fold in the flour.

3.Divide batter in lined cupcake cases and add 1 tbsp of lemon curd in each cases, bake for 20 minutes.

4.Beat the egg whites with the remaining sugar until stiff.

5.Once the cupcake are cooked ,chill for 5 minutes and pipe the meringue using a piping bag on top of the cupcake.

6.Place in the oven 10 min and then chill on a wire rack.
