Carrot and sweet pepper soup

This soup is perfect for a cold winter night in front of the fire, and can be made in large batch to be reheated or frozen . In this version i added a little touch of paprika for a smoky flavor and some chilli flakes for a bit of heat.

Serves 4 :

* 5 large carrots

*1 onion

*2 garlic cloves

*2 sweet peppers

*2 tsp of paprika

*1 tsp of dried chilli flakes#

*1 liter of vegetable or chicken stock

*200 ml of cream


1.In a large saucepan heat some olive oil , peel and chop the onion and garlic , then shallow fry in the oil.

2.When the onion is golden brown , add the peeled  and sliced carrots along with the sweet pepper after removing the seeds.

3.Add the stock , chilli and paprika , cook for 30 minute .

4. Add the cream the cook for another 5 minutes then blend using a hand blender . Season and serve.
