This recipe is actually the first one i cooked to my parents when starting my chef degree , i was 14 and found this recipe easy for a first time but very tasty . My parents loved it and even now , 14 years later i still enjoy cooking this dish . For the chicken , you can use wings , fillet, legs or even a whole one . This time i used mini chicken fillet because they are faster to cook after a day at work , but you can use any cut of chicken you like . Luckily in my garden i grow lemon thyme , but ordinary thyme or oregano can replace this one.
*20 mini chicken fillet ( around 600 grs).
*4 tbsp of honey
*zest and juice of 1 large lemon
*6 lemon thyme sprigs
*1 tbsp of butter
*4 slices of lemon for decoration.
1.Preheat the oven at 200 degrees Celsius . In a small saucepan heat the honey,butter, lemon zest and juice , then set aside.
2.In a hot skillet with olive oil place the chicken and cook until brown.
3.Add the honey and lemon glaze to the chicken with the thyme and lemon slices, then cook in the oven for 8 minutes.
4.Serve with a green salad or rice.
