Honey and lemon chicken

This recipe is actually the first one i cooked to my parents when starting my chef degree , i was 14 and found this recipe easy for a first time but very tasty . My parents loved it and even now , 14 years later i still enjoy cooking this dish . For the chicken , you can use wings , fillet, legs or even a whole one . This time i used mini chicken fillet because they are faster to cook after a day at work , but you can use any cut of chicken you like . Luckily in my garden i grow lemon thyme , but ordinary thyme or oregano can replace this one.

Serves 4:

*20 mini chicken fillet ( around 600 grs).

*4 tbsp of honey

*zest and juice of 1 large lemon

*6 lemon thyme sprigs

*olive oil

*1 tbsp of butter

*4 slices of lemon for decoration.

 

1.Preheat the oven at 200 degrees Celsius . In a small saucepan heat the honey,butter, lemon zest and juice , then set aside.

2.In a hot skillet with olive oil place the chicken and cook until brown.

3.Add the honey and lemon glaze to the chicken with the thyme and lemon slices,  then cook in the oven for 8 minutes.

4.Serve with a green salad or rice.

  1. I recently found your blog and love some of the recipes – I can’t wait to try them. In fact – I’m giving this one a go tonight. Do you have any suggestions for using this glaze on a whole chicken roast?

    • I did use the glaze once on a whole roast chicken , do not put the glaze too early on the chicken as the honey might burn , but with a brush spread the glaze during the cooking , maybe add more honey to the recipe to get a thicker glaze so it will stick to the chicken and cook with some lemon slices and stings of thyme .   2. I am in love with the effect of the glaze on the chicken. Is it really strong in taste? Would you recommend to also bake a whole chicken with a lemon and thym in the cavity and then pour the glaze on top? Or to only use the glaze?

    • The taste isn’t strong but you can balance by adding more or less honey and lemon depending on your taste. By adding lemon slice and thyme in the cavity it will adding more flavor so it will be a great addition to the glaze , but personally I love to use this glaze on chicken wings, you should try.
