Mincemeat recipe

When i first came to Ireland i never heard of mince pies , mince meat or even Christmas pudding . And i used to think that it was actually meat cooked with dried fruits , sugar …. Until i watched a cooking and watch a mincemeat recipe being made . It took me a while to appreciate the Irish Christmas desserts as they are  full of strong flavors such as spices, alcohol , sweet and candied fruit . But now after 8 years i do like a piece of Christmas pudding or a few mince pies with a drizzle of brandy custard. This year for christmas i decided to make my own mince pies  and hopefully next year make my own Christmas  pudding.


*100 grs of shredded beef suet

*100 grs of sultanas

*100 grs of currants

*100 grs of diced mixed fruit ( mine contains orange, melon,papaya and cherries from the SHAMROCK brand)

*2 bramley apples

*1 carrot

*100 grs of muscuvado sugar

*1/2 cup of brandy

*zest and juice of 1 orange

*zest and juice of 1 lemon

*2 tsp of mixed spices


1.Peel and grate the carrot and apples then add in a large bowl or dish with all the remaining ingredients.

2.Mix well with a wooden spoon and leave to marinate overnight and the following day cook in a saucepan for 30 minutes on low heat .

3. Pour into sterilized jars  and keep for up to a year.
