Orange and olive oil cake

A few years ago while watching a tv show called ” COME DINE WITH ME” , one of the guests  baked an olive oil cake, and i as surprised by the recipe and was motivated to try it . I completely forgot about  this recipe until i found it in one of my scrapbook last week . I added  orange to the recipe and topped the cake with an orange syrup and orange zest. The cake was so good that it only lasted 3 hours on the kitchen counter and i will definitely bake it again soon.

For the cake:

*1 and 1/4 cup of plain flour

*3/4 cup of sugar

*2 eggs

*1 tsp of baking powder

*1/2 tsp of baking soda

*1/2 tsp of salt

*1/3 cup of olive oil

*juice and zest of a large orange

For the syrup:

*zest and juice of 3 oranges

*2/3 cup  of sugar

 

1.Preheat the oven at 180 degrees Celsius.

2.In a bowl mix the eggs and sugar  until pale and light. Add the olive oil , orange juice and zest and mix well.

3.Slowly add the flour, baking powder, baking soda and salt, mix well and pour into a greased cake pan of your choice and bake for 30 minutes.

4. In a small saucepan of boiling water, poach the zest of three orange for 2 minutes and then drain . Repeat this process three times , this technique will remove the bitterness of the zest.

5.In another saucepan cook on high heat the sugar and oranges juices until it forms a thick syrup , add the poached  zests and switch off the heat.

6. Once the cake is cooked , chill for 10 minutes then remove from baking tin .

7.Reheat the syrup and pour on the cake .
