Breaded smoked haddock with pea puree

In ireland  breaded or battered is two of the most used technique to cook fish , mainly cod and haddock . I do enjoy both fish but i prefer smoked haddock for this extra  smokey flavor that really goes well with the sweetness of peas. Breaded fish are often deep fried  but i prefer to bake mine  for a healthier version. breaded smoked haddock with pea puree


Serves 4:

*4 smoked haddock fillet

*1 egg

*1/2 cup of milk

*80 grs of breadcrumbs

*2 cup of frozen peas

*1 cup of milk

*1 garlic clove

*1/2 cup of flour


1. Preheat the oven at 180 degrees celsius. Take 3 differents   bowl , one for the flour, one for the breadcrumbs and the last one  for the beaten egg and milk .

2.Take the haddock , place in the flour ,shake well to remove excess flour and then dip in the egg mixture and finally in  the breadcrumbs. Repeat the process for all the fish. Place on a baking tray lined with greaseproof paper and bake for 15-20 minutes.

3.In a saucepan place the peas with the milk and the crushed garlic, cook until most of the milk is reduced and mix using a hand blender or a food processor.

4.Place the pea puree in 4 plates , place the breaded haddock on top and serve with a lemon slice.
