Golden syrup is an ingredient that i only discovered when i moved in with my fiancee . In my days off work i used to make pancakes and i usually eat mine with nutella but aisling bought one day a tin of golden syrup and made me try as she loves it on her pancakes. I found it a bit too sweet to my liking but is a good alternative to maple syrup and honey . One day we bought a golden syrup cake in store and i really enjoyed it with a cup of coffee, i knew it was a must try at home.
*225 grs of soft butter
*225 grs of muscovado sugar
*600 grs of golden syrup
*450 grs of self raising flour
*300 ml of full fat milk
1.Preheat the oven at 160 degrees Celsius. In a saucepan melt the butter , sugar and 450 grs of the golden syrup reserving the rest for later.Once melted chill for a few minutes.
2. In a bowl with an electric whisk mix the eggs with the milk , gradually add the flour . Pour the chilled sugar mixture to the batter and mix well.
3.Line a baking tray with greaseproof paper , pour the remaining golden syrup evenly and pour the batter on top of the syrup. Bake for 40-45 minutes.
