Redcurrant and lemon madeleines

This summer , my fridge was overcrowded with fruits that was given to me . So i ate some fresh , made some jam , baked some pies but i still ended up up with some lovely redcurrants that i froze for winter days . This day was today when i found in the bottom of my freezer a bag of redcurrants and decided to use it paired with lemon into a Madeleine recipe. In my fridge you will always find lemon curd so i had to use it in this recipe and it really gave a fresh kick to the Madeleine . A must try for Madeleine lovers.

redcurrant and lemon madeleineIngredients:

Makes 12 Madeleine:

*2 eggs

100 grs of caster sugar

*100 grs of  flour

*100 grs of butter

*3/4 tsp of baking powder

*zest of 1 lemon

*2 tbsp of lemon curd

*3/4 cup of redcurrants


1.Preheat the oven at 180 degrees Celsius. Melt the butter.

2.In a bowl best the eggs with the sugar until pale . Add the flour , lemon zest and the chilled melted butter and whisk well to prevent any lumps.

3.Place into a greased Madeleine tray . Press a few redcurrants in each Madeleine .

4.Pour the lemon curd into a piping bag and squirt it into each Madeleine then place in the oven for around 10 minutes.

5.Chill for 5 minutes before removing from the tray and dust with icing sugar.

6.Serve straight away.
