Lemon and poppy seed drizzle cake

This is a recipe that i picked from my ” I HAVE TO TRY IT OUT”  list and i am glad i did because this cake is so moist and the lemon flavoured icing is to die for. Bake some to your guests and they will never leave your house.

Lemon and poppyseed drizzle cakeIngredients:

For the cake:

*225 grs of self raising flour

*225 grs of softened butter

*225 grs of sugar

*4 eggs

*50 grs of poppy seeds

*zest of 1 lemon

For the icing:

*juice of 1 lemon

*225 grs of icing sugar

1.Preheat the oven at 180 degrees celsius. In a mixing bowl cream the butter and sugar using a hand mixer until pale and fluffy.

2.Add the eggs one at a time while mixing then add the sifted flour and the lemon zest , beat well for a minute. Pour in a greased loaf tin, place in the oven for around 45 minutes or check with a wooden skewer , it should come out clean.

3.Once the cake is cooked , chill on a wire rack .

4.With a hand mixer , beat the lemon juice with the icing sugar until smooth and drizzle over the cake using a piping bag or a fork.
