I love cooking fish as it so easy to accommodate to other ingredients , fast to cook and very healthy. Recently i purchased some serving slates as i broke my last one and this dish was an occasion use them. To accompany the fish i used what i think is the best herbs to use with fish : DILL. Of course you can other tasty herbs such as coriander or chives but i preferred dill for it fresh flavor.
*4 hake fillets
*32 cherry tomatoes on the vine
*1 cup of fresh chopped dill
*3/4 cup of double cream
*1 cup of white wine
1.Preheat the oven at 180 degrees Celsius. Peel and finely chop the shallots .
2.Place the hake with the cherry tomatoes on a baking tray , drizzle with some olive oil and season with sea salt and cracked pepper.Bake 10 minutes at 180 degrees Celsius.
3.In a skillet or frying pan reduce the wine with the shallot to half then add the cream and dill , reduce to low heat and cook for a few minutes . Season to taste.
4.Once the fish is cooked ,serve with some dill sauce and 8 cherry tomatoes per guest .
