This healthy salad is perfect ate on its own with some toasted baguette but it can be also served as a side dish to grilled meat and fishes. As a starter for vegetarian guests , you can add some grilled haloumi cheese , but also mozarella , feta …… As an alternative , you can place some of this salad on a half ciabatta bread , top it with goat cheese and grill in the oven. Many great recipe can come from this salad.
*3 yellow peppers
*3 red peppers
*4 tbsp of olive oil
*2 tbsp of balsamic vinegar
*salt and pepper to taste
1.Preheat the oven at 180 degrees Celsius.
2.Place the peppers on a roasting tray and drizzle with one tbsp of olive oil , reserving the rest for the dressing . Season and roast in the oven for 25 minutes.
3.Once the peppers are cooked , place them in a plastic bag and close it tight , so that the steam can loosen the skin.
4.After 20 minutes or when the peppers are cool enough to handle peel with a small knife and remove the seeds. Cut in strips and place in a bowl.
5.Add the olive oil , balsamic vinegar and mix with the peppers , season with salt and pepper then serve .
