Homemade mayonnaise is so much better than any store bought varieties , firstly because of its lovely taste , nice color and the fact that you can add most of your favorites flavor ( chilli , garlic , herbs……) . It only require five minutes and two important rules : Add the oil slowly and beat well . I used rapeseed oil to my mayonnaise to give a deep yellow color but sunflower or olive oil will do. You can use this recipe as a base by replacing the lemon juice by vinegar or replace the chilli with garlic , herbs , smoked paprika and many more .
*1 egg yolk
*250 ml of rapeseed oil
*1 tsp of dijon mustard
*1/2 tsp of lemon juice#
*zest of half a lemon
*1 small chilli
1.Cut the chilli in half , remove the seeds and finely dice.
2.In a mixing bowl add the egg yolk,mustard and vinegar and whisk well . Season with salt and pepper.
3.Add the chilli and lemon to the egg mixture, then while constantly whisking gradually add the oil little by little .
4.When the mayonnaise is ready , it van be kept in the fridge for 4-5 days .
