Zucchini fritters

By definition fritters  are always associated with unhealthy deep fried food but it isn’t  always the case .This version  is quite healthy as i cooked mine in a teaspoon of coconut oil and served it with smoked salmon . It is quite a cheap dish as it cost me around 5 euros for 2 persons including the smoked salmon and the homemade mayo ingredients.

Zucchini frittersIngredients:

Makes 4 fritters:

*1 large zucchini

*1 egg

*1/2 cup of plain flour

*1 tsp of baking powder

*2 garlic cloves

*1/2 tsp of cayenne pepper

 

1.Wash the zucchini and remove the extremities . Finely grate along with the peeled garlic cloves.

2.Beat the egg and add to the zucchini . Add the dry ingredients, season with salt and pepper then mix well using a wooden spoon .Divide the mixture in 4.

3.Heat a nonstick pan , add some oil of your choice and place the patties .Start with high heat to color the fritters  then reduce to low heat to cook them through . It should take around 3 minutes on each side.
