Afternoon tea loaf

This fruity loaf is commonly served in Irish household for tea time  . It is becoming more and more popular  in coffee shop and bakeries  and is also one of the easiest recipe to do.  For the fruit Mix i used a selection of dried berries , raisins and candied peel  but feel free to use any dried fruits you like.

Afternoon tea loafIngredients :

*225 grs of self raising flour

*280 grs of dried fruits

*300 ml of boiling water

*2  tea bags  ( i used lipton’s red fruitflavored  tea)

*60 grs of caster sugar

*60 grs of muscovado sugar

*1 egg

*2 tsp of mixed spice

 

1.In a large bowl add the dried fruit along with the tea bags. Pour the boiling water  cover with a kitchen towel and leave it soaking overnight.

2.Once the fruits has soaked in tea overnight , remove the tea bags and preheat the oven at 170 degrees celsius.

3. Add the remaining ingredients to the tea and fruit mixture and mix well using a wooden spoon.

4. Pour the batter into a greased baking tin and bake for around 1 hour and 15 minutes.
