Cherry tomato tarte tatin

Tarte Tatin is a well know french dessert that consist of apples and puff pastry , One of the easiest pie to realize.  A few times i heard of tomato tarte tatin served in restaurant during summer time and i was surprised but never got the occasion to try one.  I  realized this tarte tatin and served as a starter with some rocket lettuce drizzled with some olive oil and balsamic vinegar for an ultimate taste combination.

tomato tarte tatinIngredients :

Serves 6-8:

*500 grs of cherry tomatoes.

*1 roll of ready to roll puff pastry

*1 tbsp of honey

*1 tbsp of butter

*Fennel seeds ( optional)

 

1.Preheat the oven a 200 degrees Celsius.

2.In a cast iron skillet melt the butter and honey then remove from the heat.

3.Slice in half the tomatoes  and place in the skillet .

4.Roll out the pastry , cut to size and place on the tomatoes, tuck in the edges and prick the pastry with a fork.

5. Place in the oven 25-30 minutes at 200 degrees celsius

6.Once cooked , rest for 10 minutes before placing an upside down plate on the pan and flipping so the tarte comes out.

7.Drizzle with balsamic vinegar and olive oil

  1. Just tried to make this and it looked pretty and flavors were there. However crust was pretty soggy. I let it sit about 15-20 min before flipping. Do u think that was problem? Any suggestions?

    The rocket was great on it. We also added a little crumbled goat cheese.

    • You can sprinkle some breadcrumbs on the tomatoes before placing the puff pastry , it should soak up any extra moisture . The added goat cheese is a great idea , i will try it . Thank you for your comment.
