Mussels with chorizo and tomato

This dish will bring some Spanish sun  to your table even on a rainy day . The mussels gets infused with the smokiness of the chorizo  and this dish is best served with a piece of bread so you can dip it in the sauce and enjoy every drops of sauce.  I served the mussels as a starter with a glass of chilled white wine and it was delicious , definitely a recipe i will cook again soon.

Mussels with chorizo and tomatoIngredients:

Serves 2 :

* 500 grs of mussels

*2 garlic cloves

*1 red onion

*6 anchovies

*100  grs of chorizo

*1 cup of tomato sauce ( or passatta)

*olive oil


1. In a pot heat the olive oil , slice the chorizo and add to the pot .

2. Dice the onion and garlic then add to the chorizo along with the anchovies.

3.Cook for a few minutes and then add the tomato sauce  and keep cooking for another 2 minutes .

4.Finally add the mussels , stir well and cover with a lid .

5.Cook for 3 -4 minutes or until the mussels are opened . Discard the mussels that will not open .
