In local supermarket , for the last week , you can find round courgette or zucchini. They taste the same as their long cousin but are a lovely starter stuffed with meat and topped with some melted cheese. For this recipe i used ratatouille to stuff the courgette , so that the recipe is vegetarian and vegan if you use the cheese. Of course for meat lovers , bolognaise leftovers can be a great addition to this dish . Serves two :
*2 large round courgette
*2 cups of ratatouille
*1/3 cup of mozzarella cheese.
1.Preheat the oven to 200 degrees Celsius.
2.Cut the top off the courgettes and scoop out the flesh using a spoon .
3.Place the courgettes on a baking tray , drizzle with some olive oil , season with salt and pepper then place in the oven for 20 minutes.
4.Reheat the ratatouille then with a spoon stuff the courgettes with it . Sprinkle some cheese on top and place in the oven for an additional 10 minutes
