Thai red prawn curry

At home the only good takeaway restaurant closed a little while ago and sadly their Thai curry was the best i ever tasted .  At the time i spoke with the chef and owner who came from Thailand and she was going to teach me some recipes but unfortunately  business wasn’t great and she had to close down.  So  with a little research and tweaks i managed to cook a curry that nearly taste as good as the original one and i wanted to share the recipe with you and hopefully you will like it .

Thai red prawn curryIngredients:

Serves two :

For the red curry paste:

*1 lemongrass stalk

*5 birds eye chilli

*1 tbsp of fresh ginger

*1 tbsp of paprika

*5 curry leaves

*1/2 tsp of cumin

*1/2 tsp of ground coriander

*4 garlic cloves

*2 anchovies

*1 tbsp of tomato paste.

 

Other ingredients:

*1 tin of coconut oil

*400 grs of tiger prawns

*1 tbsp of oil

 

1.In a food processor , combine all the red curry ingredients and blend until it become smooth and a paste has formed.

2.In a pan heat the oil , add the curry paste and cook for 2 minutes , add the prawns , stir well and finally add the coconut milk .

3.Cook until the sauce is reduced and became thick, season with some salt and serve.
