Banana blondies

Many people loves banana but they can get over ripe very fast and they often end up in the bin . Since i hate to waste food and i am fed up  making banana bread i start to look for ideas and thought that blondies can be a great use for old bananas. I was going to add chocolate chip to the recipe at first  but then decided to keep it simple  and just baked plain banana blondies.

Banana blondiesIngredients:

*140 grs of butter

*3 ripe bananas

*3 eggs

*2 cup muscovado sugar

*1 cup of white bread flour

*1 cup of coarse wholemeal flour

*1 tsp of vanilla essence


1.Preheat the oven to 180 degrees Celsius.  In a saucepan , melt the butter .

2.Once the butter is melted add the sugar , remove from the heat and keep it aside.

3.In a mixing bowl  mash the bananas , add the eggs and the vanilla essence . Mix until smooth.

4.Add the butter and sugar to the  banana mixture, stir well and fold in the two flour.

5. Pour the batter in a brownie pan lined with greaseproof paper and bake 30 minutes at 180 degrees celsius  or until a skewer dipped in the cake comes out clean.

6. Once cooked chill 30 minutes before cutting.
