Goat cheese and tomato bake

I recently ate in an Italian restaurant and ate a dish that i first found strange but was actually really good ,a tomato and cheese bake .I never seen this dish served in any restaurant and was intrigued by it . So i went home and a few days later reproduced  this dish using a french goat cheese called cabecou but you can use Gorgonzola , mozzarella or other melting cheese. The good thing is that it can be made in minutes and you can use any kind of tomato sauce if you do not have time to make yourself.

Goat cheese and tomato bakeIngredients:

Serves two:

*1 onion

*3 large ripe tomatoes

*2 garlic cloves

*1 tsp of dried oregano

*2 slices of  cabecou goat cheese.

*1/2 tbsp of olive oil

*1 tsp of sugar


1.Dice the onion and garlic , and add to a hot pan with olive oil, cook  until golden brown.

2.Roughly chop the tomatoes and add to the pan along with half a cup of water.

3.Add the sugar and oregano , then cook  on low heat until it become thicker.

4.Preheat the oven at 200 degrees Celsius.

5.Pour the tomato sauce in ramequin dishes , place a slice of goat cheese  and bake  in the oven until the cheese is fully melted.

Serve  hot with a piece of bread.
