Smoked sausages with braised lentils

This dish is a french classic dish served in every household and mine wasn’t an exception as this dish was one of my favorites . In france we call it ” SAUCISSES LENTILLES” and is best served with a some dijon mustard .  We often use  a sausage called “SAUCISSES DE MORTEAU” but i cannot find it in Ireland so i used some polish smoked sausage that did the trick.

Smoked sausage with braised lentilsIngredients:

*2 smoked sausages

*1 onion

*1 celery stalk

*1 carrot

*1 cup of lentils

*2 bay leaves

*400 ml of chicken stock


1.Peel and finely dice the carrot, onion and celery stick.

2. In a cast iron saucepan , heat some olive oil and gently sweat the onion.

3.Add the carrot and celery . Cook for 5 minutes .

4.Add the lentils , chicken stock and bay leaves to the pot , cover with a lid and cook for 20 minutes on low heat.

5. Stir the lentils , add the smoked sausage and cook covered for another 30 minutes .

6. Once cooked season with salt and pepper then serve  with some mustard
