A while ago , i posted a wild mushroom risotto which was the recipe that i like the most , but unfortunately my fiancee doesn’t agree with me . She prefers button mushroom instead of while mushroom and also like it more creamy . Since today i cooked her today mushroom risotto “HER WAY” , i decided to share with you this recipe which is also very good one .
*300 grs of arborio rice
*1 litre of chicken stock
*250 grs of button mushroom
*200 ml of single cream
1.Peel and dice the shallots then shallow fry in a hot pan with olive oil.
2.Cut the mushrooms in half and add to the pan.Cook for 3 minutes.
3.Add the rice and cook for 2 minutes while constantly stirring.
4.Start to add gradually the chicken stock a cup at a time until it has fully evaporated .
5.Add the cream and keep cooking on low heat .
6.Season with salt and pepper and serve topped with some Parmesan shavings
