Vegetable couscous

I often make this dish at home mainly because it is so quick and simple to realize . This salad is perfect for lunch at the office , an outdoor picnic or just for an ordinary healthy lunch . It is great for people on a diet as it is filling and tasty . Also some meat or tuna can be added to it for a more complete meal. For people that are not familiar with couscous the ingredients are easy as you need a cup of couscous for a cup of boiling water .

Serves 4:

*2 cups of uncooked couscous

*4 cups of boiling hot vegetable stock

*2 bell peppers

*1 red onions

*1 garlic clove

*2tbsp of dry raisins

*1 tsp of hot chilli sauce

*1 small courgette


1.Heat a large skillet with some olive oil.

2.Peel and dice the vegetables , cook in the pan for 5 to 6 minutes .

3.Remove from the heat , add the couscous  and stir well .

4.Add the boiling stock , stir  and cover with a lid . The couscous will soak up  the stock , it should take 5 minutes .

5.Remove the lid , add the chilli sauce , a drizzle of olive oil and season with salt and pepper.

6.Serve warm or cold as a salad the following day.
