This is a refreshing and healthier take on the classic chicken Caesar salad often served with bacon , croutons and iceberg lettuce. This version is perfect for barbecues as you can char-grill the salmon for smoky flavor.
*2 salmon fillets
*1 tbsp of chopped sun dried tomatoes
*2 crackers( healthier version instead of croutons)
*2 tortilla wraps
For the dressing:
*3 tbsp of low fat mayonnaise
*1tsp of garlic puree
*1tbsp of balsamic vinegar
*1 tbsp of grated parmesan
*1 tbsp of water
*2 anchovies( optional)
1.To realize the dressing , combine all the ingredients in a food processor until smooth , you can add more water if the sauce is too thick.
2.In a griddle pan with olive oil , grill the salmon until cook and put aside.
3.To dress , start by placing the wrap ion the plate, spread some dressing with a spoon .
4.In order , place the rocket , sliced avocado, sun dried tomatoes and cherry tomatoes on the wrap.
5.Break the cracker with your hand and sprinkle on the salad for a crispy texture.
6.Place the salmon on top , add some Parmesan shavings , sea salt and more sauce if needed. And voila!!!
