Lobster with a fresh herbs crust and pea puree

I love lobster but only eat it the plain way , freshly cooked with homemade mayonnaise . Unfortunately , i cannot get a hold of a fresh lobster so i have to use a frozen one , which is still OK . This time i decided to serve it a different way , and it was really nice and refreshing . Since i grow my herbs at home i took this opportunity to use them in this recipe . I served this dish with a green pea puree because it one of my favorite side order , it tastes so good and has a lovely bright green colour that compliment well with the lobster.

Lobster with a fresh crust and green pea pureeIngredients:

Serves 2;

*1 whole frozen lobster thawed

*2 tbsp of fresh herbs of your choice

*1/2 cup of breadcrumbs

*1tsp of lemon juice

*1 tbsp of olive oil

*1 cup of frozen peas

*1tbsp of single cream

 

1.Cut the lobster lengthwise with a sharp knife . Remove the claws form each side .

2.Remove the flesh from the tail .  break the claws with the back of a knife or a small hammer , then collect the flesh.

3.Carefully rinse the head and tail of the lobster , do not break it as we gonna stuff it.

4.Cut the flesh in large chunks then place in the clean shells.

5.In a bowl , combine the breadcrumbs,olive oil , , lemon juice and your selection of chopped fresh herbs.Evenly sprinkle the crust on both half stuffed lobster

6.Bake in a preheated oven 15 minutes at 180 degrees Celsius or until the crust has colored.

7.In the meantime  Cook the peas in a pot of boiling water for 5 minutes before draining.

8.With a hand blender , mix the peas with the cream , and a little bit of water . The puree should not be too thick. Season with salt and pepper.

9.Once the lobster is cooked , served one half per guest with a spoon of the green pea puree.
