Chicken yakitori

The first time i ate yakitori was 10years in a restaurant in Cannes. I instantly fell in love with this dish and enjoy cooking it once in a while. This traditional Japanese skewers are often served with a cold beer , a perfect dish for any sunny days , for me another occasion to lit the barbecue.

chicken yakitoriingredients:

Serves 4:

*4 boneless chicken breasts

*2 cups of japanese mirin

*2 cups of light soy sauce

*2 tbsp of brown sugar

*1 tsp of finely chopped ginger

*3 tsp of finely chopped garlic

*4 bamboo skewers

 

 

1.In a saucepan , add the mirin , soy sauce,garlic , ginger and brown sugar, then cook over medium heat until it has reduced by half and become thick.

2.Cut the chicken lengthwise in strips . Thread eack chicken breast on a skewer.

3.To cook the chicken , you can either use the grill from your oven , cook in a griddle pan or barbecue it.  With each of these cooking techniques , the process is the same . Cook the chicken until colored then start brushing the glaze on both side continuously until the meat is cooked and glazed .
