Moroccan chicken

It is time for a culinary flashback . Today i am cooking a dish that i last ate 10   years ago . A middle eastern shop in my mother’s town was selling couscous and Moroccan chicken for take away , she used to buy it for my sisters and i every week ends. The chef never gave his recipe away after many attempts .  So today i tried to remember  the flavors of the  dish , and using ingredients and spices that i have in my kitchen , i cooked this chicken dish that was very good but  was missing something . This recipe is a work in progress.

Serves 2:

*4 chicken thighs

*3 tbsp of harissa

*3 garlic cloves

*70 grs of pitted green olives

*2 pickled lemons

*2 tsp of ras el hanout

*2 tbsp of olive oil

 

1.Finely chop the garlic and place in a bowl along all the remaining ingredients.

2.Mix well and marinate in the fridge for 4-6 hours or overnight if possible.

3.Place the chicken and marinade in an oven dish  and bake 30 minutes at 190 degrees Celsius.

4.Once cooked , serve with couscous or a green salad.

  1. I love Moroccan food! I’m always intimidated to make it because I don’t have a Tagine and I wasn’t sure I could make it in a regular oven dish…This recipe looks super simple! Will definitely try it.
