Every Game meat deserves a nice tasty , whine base sauce packed with flavours. This sauce is inspired by the classic french stew called “BOEUF BOURGUIGNON” . A chunky sauce made with herbs , shallots , bacon , all drowned in red wine and reduced to a syrupy texture . It is perfect for the venison but is also great with a rib eye steak or beef fillet.
serves 2 :
*2 garlic cloves
*1/2 cup of bacon bits
*1 pint of red wine
*1 pint of beef stock
*1 tsp of chopped thyme
*1 tsp of chopped rosemary
*1 tsp of sugar
1.In a frying pan , cook the bacon with the diced shallot and garlic until golden .
2.Deglaze with the red wine and reduce to half .
3.Add the chopped herbs and sugar along with the beef stock and reduce until thick .
4.A teaspoon of gravy powder can be added to thicken the sauce .
5.Serve hot with a venison steak and homemade mash potatoes.
