Roasted vegetables

Roasted vegetables is a good accompaniment to many dish such as grilled meat and fishes, pasta , rice , couscous…..  I often use leftovers roasted vegetables to top my pizza with some melted mozzarella  . I wrote a basic recipe with vegetables that i had available but you can use  whatever is hanging around in your fridge.

Roasted vegetables

Ingredients:

Serves 8 peoples:

*3 bell peppers( one of each colour)

*2 courgettes

*1 red onion

*3 tomatoes

*3 garlic cloves

*a small handful of fresh herbs such as rosemary , thyme , oregano ….

*2 tbsp of olive oil

 

1.Preheat the oven at 180 degrees Celsius.

2.Roughly cut the vegetable and place on a roasting tray.

3.Season with the chopped herbs , olive oil , salt and pepper.

4.Roast 40 minutes or until the vegetables are cooked through .

5.Serve with grilled meat or fishes. Leftovers can be kept for a few days .
