Tarte Tatin

This famous french dessert is one of the easiest  to realise as it require very little preparation and ingredients . The classic version is made with apple but you can substitute by other fruits such as pears, peaches , banana or even tomatoes for an original starter.

*1 ready to roll puff pastry

*100 grs of sugar

*4 apples  ( i used granny smith)

*2 tbsp of butter

*1/2 vanilla pod


1.Preheat the oven at 190 degrees Celsius.

2.In a skillet , start the caramel by cooking the sugar with 1/3 cup of water and the vanilla pod and seeds.

3.Once it become golden brown and thick , remove from the heat.

4.Peel the apples , cut three of them in 8 wedges and remove the core with a knife , Dispose the apples on the caramel leaving like in the picture below.

tarte tatin5. Cut horizontally in half the 4th apple  , remove the seeds and place both half in the middle.

6.Place the butter on the apples .

7.Roll out the pastry to a size that matches the pan or dish that you are cooking the pie into.

8.Place the puff pastry on the raw apples , tuck down the edges and place in the oven for 25-30 minutes or until the pastry is golden brown and the juices bubbles on the edges of the pie.

9.serves warm with ice cream or creme anglaise.
