Courgette spaghetti in tomato sauce

This  recipe is a quick and healthy alternative to spaghetti in tomato sauce , and it is also gluten free and vegan. The courgette itself is quickly cooked in the warm sauce so it doesn’t overcook and keep a little bit of  crunch.

Serves 2:

*4  courgettes

*1 red onion

*2 garlic cloves

*500 grs of chopped tomatoes

*1 tbsp of ketchup

*1 tsp of thyme


1.Peel and dice the onion and garlic.

2.Heat a pan with some olive oil , then shallow fry the garlic and onions in it .

3.Add the thyme , chopped tomatoes and ketchup, reduce to  low heat and let simmer .

4.In the meantime , cut the courgette in spaghetti shape using a mandolin or by hand using a knife if you do not own one.

5.Once the sauce is reduced to half , season with salt and pepper  then add the courgette to the pan .

6.Still on low heat cook the courgette in the sauce until cooked .

7. Serve with fresh basil and a little bit of cheese if desired.
