Often served as a vegetarian option in restaurants, enchiladas is definitely taken to another level while using meat . I used minced beef for this recipe but turkey can be used for a healthy option.
*500 grs of lean minced beef
*2 bell peppers
*3 garlic cloves
*1 tin of chopped tomato
*2 tsp of paprika
*1 tsp of cayenne pepper
*1 tsp of dry oregano
*4 tortilla wrap
*1 cup of grated cheese
*1 cup of water
1.In a frying pan with a little bit of oil, cook the meat for 2 minutes .
2.In the meantime peel and dice the vegetables before adding to the meat.
3.Cook the beef and vegetables until it starts to colour , add the spices along with the chopped tomato and a cup of water.
4.Cook until most of the juice has reduced .
5.Once the meat is cooked , fill the wraps with the meat , roll them and place on a baking dish . sprinkle with cheese and place in the oven on grill function to melt the cheese.
